Nancakes

Breakfast for dinner? It's a pretty simple concept, my mom used to do
it alot when I was a kid. I'm not a huge morning eater, so it's a
great option. Last night we had pancakes and hashbrowns for dinner.
1 part delicious and 1 part being too poor to afford groceries. My basic
pancake recipe is as follows:

1 1/2 cups flour
1 tsp salt
1 tbsp baking powder
1 cup of 'milk'
2 tsp sugar

If the batter is too dry, add more milk. I'm a fan of cold pancakes
the day after. It's always fun looking for different thing to make
pancake sandwiches out of. Hashbrowns are as easy as grating some
potatos rising and draining them a few times, and frying those puppies
up. Due to finacial matters we're considering some food alternatives,
more on that later.

Vegan Margarine!



Since I went vegan the only margarine I really ever used was Celeb "Lactose Free". It has a really movie popcorn butter taste and the texture is extremely soft. On our first grocery visit upon moving to Toronto we spotted Becel Vegan, and decided to give it a try. This is probably one of the margarines (vegan or otherwise) I've ever experienced. I did have Earth Balance the few times I could find it when living in Oshawa. I find the taste quite overbearing and the texture way to hard. Becel vegan margarine has a good mild taste, good to eat on its own with bread. It also stood up well in a my nainamo bar recipe that I made recently. All in all, a good product. Just wanted to spread the word. (Get it? Get it? See what I did there?)

Rice is nice...

I've been toying with the idea of a food blog for sometime now. I'm that friend that is constantly thinking about food. The biggest difference I identify between myself and your average "foodie" is that my food is cruelty free. I am a proud vegan of over a year. My biggest pet peeve when talking to meat-eaters or even vegetarians about veganism is when someone says to me "I could never be a vegan". Enough about me. Let's get to the good stuff... food. Tonight's dinner is fried rice. Easy and delicious. Inspired by my intense craving for Chinese food but lack of funds. My boyfriend asked for rice, I found some veggies in the fridge and we're good to go. We were lucky enough to have a small rice cooker donated to us some time ago, but cooking rice in a pot it just as easy. Don't use "Minute Rice", that shit sucks. I haven't decided if I want to so this as a proper recipe for just a general description. Feedback is welcomed.

So after setting my adorable little rice cooker up with 2 cups of rice, I diced up some baby carrots (reserving some for rat snacks later). I also diced up an onion. In the back of the freezer a half eaten bag of frozen corn was hiding, so I pulled that out too. The carrots and corn needed some pre-cooking. While I don't own a steamer basket or microwave, Ive discovered my own way to stream veggies. I just take my big stock pot, fill it with an inch of water and put a metal strainer in the bottom. Once the veggies are in the strainer, crank up the heat and slap a lid on that baby. My boyfriend and I are big onion people, if you don't love the burn of a good onion just throw them in the rest of the veggies for a steam.

The rice has cooked itself and my veggies are steamed. At this point I curse the universe for not owning a wok, but I get over it. Some oil in the bottom of the same pot I just used for steaming. Saute the onion a little with the corn and carrots. Get a little colour on them. If we had any tamari or soy sauce at this point I would have added some. I mince some garlic while the veggies are dancing away in the pot. Add the rice, make sure you keep it moving. The rice will turn from delicious crusty brown to burnt pretty quick. Throw the garlic in at the last minute. There is nothing more disgusting than some burnt garlic in your food. And we're done. I realize this is not the most exciting or culinarily impressive recipe, but damn did it taste good.
